Chances are you know someone who has gone gluten free. As for me, my mom and some aunts and cousins all went gluten free back in 2010 when I was pregnant with my son, at the same time I had been diagnosed with Gestational Diabetes. As you can imagine, that was a fun summer for all of us, each one craving the things that they really shouldn’t be eating.
I remember celebrating my grandfather’s birthday with a table covered in gluten free faire, diabetic-friendly snacks, and then a small corner of the table for those without dietary concerns. It was my first introduction to gluten free and it really wasn’t a great start to our relationship. I recall the foods being kind of bland, way too dense, and extremely small portions for the money. At that time, I remember thinking “thank goodness I’m just diabetic!”
Recently though, I got to try out some selections from Udi’s Gluten Free Foods and I realized maybe I had given up on a gluten free relationship too soon. It turns out their line isn’t at all what I was expecting, and some of it is actually quite delicious. Specifically, the cookies. And, t he pizza and granola. As you can see, I’m no longer on a diabetic diet.
I didn’t get to choose the items that came in my Udi’s Gluten Free kit, so some of the items weren’t something I would have normally have chosen, but even so, they still were devoured by my family. While the bread and the bagels weren’t my favorite, my mom who only eats gluten free thought they were delicious.
To best enjoy our kit we all decided we would go gluten free with Udi’s one day, starting with breakfast that consisted of granola and cinnamon raisin bagels. Hubby and I really liked the granola and the kids preferred the bagels. We don’t normally get cinnamon raisin bagels, so I wasn’t exactly sure how to serve them, but I guess we didn’t do so bad with just a little bit of butter because they all got eaten.
For lunch we served sandwiches on Udi’s Gluten Free bread, which was quite a bit denser than the wheat bread we are used to. While it wasn’t my favorite bread, it wasn’t that bad and it’s certainly better than not being able to eat bread at all!
Once dinner rolled around, we pulled the Udi’s Gluten Free pizza crusts out {they come 2 in a pack} and we covered them with our favorite pizza toppings. We love pizza night at our house so I was hoping that the Udi’s brand would go over well and was thrilled when it did. We actually prefer the Udi’s variety to the non-gluten-free brands we’ve tried before, which is a big thing for us. We actually like them so much that we are definitely going to try them again down the road.
After dinner, we opened up the snickerdoodle gluten free cookies and we each had one for dessert. These were probably our favorite of the Udi’s Gluten Free items sent and they went over really well. They were the perfect amount of soft and moist and tasted like something you would buy at a fancy bakery, which I was really surprised about. Like the pizza crusts, we will definitely be buying these again.
